A couple weekends ago we went out to Josh's dad's house for a visit. We brought our giant zucchinis with us and Grandma Melissa taught us how to make and can Zucchini Relish! We had fun watching the men cram the veggies in the food processor and then we relaxed on the porch while we waited for the packed ice to push the salt through the shredded mixture. Then I watched Grandma Melissa alter her 30 year old recipe to match the amount of zucchini/veggie mash, just like a pro. We mixed in sugar, mustard powder and vinegar, then we created an assembly line to quickly clean and pack the jars, then seal and process them in boiling water for 30 minutes.
It is so satisfying to start with a few zucchini and end up with 12 pretty jars of relish to enjoy for a LONG time!
PS- 12 jars and we only used the 2 biggest zucchini!
